Here’s the sweet and tasty recipe for muffins lovers. This is a low carb keto recipe that you can enjoy if you are on a ketogenic diet. With only 2 grams of net carbs, this is ideal for breakfast or snacks.

Almond Butter Muffins

Servings: 12

Prep Time: 10 minutes

Cook Time: 25 minutes

Ingredients:

  • 2 cups almond flour
  • 1 cup powdered erythritol
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup almond butter, warmed
  • ¾ cup unsweetened almond milk
  • 4 large eggs

Instructions:

  1. Preheat the oven to 350°F and line a muffin pan with paper
  2. Whisk the almond flour together with the erythritol, baking powder, and salt in a mixing
  3. In a separate bowl, whisk together the almond milk, almond butter, and eggs.
  4. Stir the wet ingredients into the dry until just
  5. Spoon the batter into the prepared pan and bake for 22 to 25 minutes until a knife inserted in the center comes out
  6. Cool the muffins in the pan for 5 minutes then turn them out onto a wire cooling rack.
